Feletto is a soft cheese
that has always been made by our dairy down the years. Grandfather
Angelo would mark the wheels using an aluminium mould with the words “S.
Pietro di Feletto” impressed on it, but as time passed, these
moulds were split in half, creating two new names: “S. Pietro” and “Feletto”. “Feletto” was
the name applied to the soft cheese, and “S. Pietro” to
the harder type.
