400 g ricotta cheese
1 egg
flour as needed

Mix the ricotta and the egg in a bowl, season with the salt and pepper (can also be prepared with smoked ricotta, spinach, sautéd boletus mushrooms, pumpkin, radicchio, etc., according to taste), then add a little flour (1 or 2 heaped tablespoons) to obtain a dry consistency. Shape the gnocchi and cook in plenty of boiling water, with salt. Dress with melted butter and grated smoked ricotta, or with a sauce of melted butter and finely grated parmesan.
