The exhibition ALMA Caseus, promoted by ALMA the Italian Cuisine International School, was developed in collaboration with Fiere di Parma and took place at CIBUS, XVI International Food Fair, Parma, from 7th to 10th May 2012.
Carlo Piccoli, from the Veneto Region, together with Emanuela Perenzin, triumphed in the section “Professionals” of the ALMA Caseus contest: he won a scholarship in order to carry out training sessions in ALMA and a two-weeks award trip for two people.
Piccoli is the owner of an artisanal diary and of a shop with annexed cheese bar and cheese restaurant: since 1995 he is “Master Cheese Taster” ONAF (“Organizzazione Nazionale Assaggiatori di Formaggi” – “National Association of Cheese Tasters”) and during his 20 years of activity in the dairy field he constantly carried out new experiments, with products that go from soft cheeses to matured cheeses as well as cheeses with complex affinage methods that include white moulds and washed red rinds.
After Piccoli came respectively Andrea Magi from Arezzo, who gave himself the satisfaction of winning the Golden Medal ALMA Caseus in the category “Farm cow’s milk Cheese” with his “Gioia del Pastore” – “Joy of the Shepherd” and Maurizio Zanolla from Florence.
Carlo Piccoli stood out at the end of a day started in ALMA and finished at Cibus, where the six finalist couples challenged each other in five different trials: a cultural test about their knowledge on the world of Italian cheese; the blind tasting session of five small cheese bites; the installation of a sales counter using ten Italian DOP cheeses and five Italian non DOP cheeses; the precision cutting; the presentation of a cheese of their own choice.
The panel, chaired by Renato Brancaleoni, lecturer at ALMA (he organises the module regarding cheese) and internationally renowned affineur, has also assigned a special prize for the student couple coming from the Hotelier Institute “Enrico Medi” of Randazzo, Catania: Giuseppina Longhitano and Morgana Raguni, who did well notwithstanding their very young age and who actually won a scholarship for a one-week course at ALMA.
The appointment with the next edition of the ALMA Caseus contest dedicated to professionals is fixed for the year 2013: the Director of Operations Andrea Sinigaglia has announced that the section will be doubled, with the introduction of a special category open only to students coming from Hoteliers Institutes.
